James Huff recipe recognized for unique twists

"James Huff , the talented chef of the newly opened Motto in Durham, N.C., gave me this recipe, which is made with crabmeat, oysters and oyster liquor, and shrimp. James likes to put his own twist on this traditional dish by roasting or grilling the salsa components; this reduces the water content of the Campechana and concentrates the flavor."
